"I bought this because it was a little cheaper than the 12" fry pan, though I had my reservations about it because of the lighter weight and steeper sides. I need not have worried. It has as large a cooking surface as the 12-incher, is easier to handle (lighter for a shrimp like me) and heats quickly and evenly. Does a better job searing steaks than my previous choice of either a nonstick stainless fry pan or nonstick anodized aluminum ridged stovetop grill pan. And I was able to deglaze the fond for a sauce Bordelaise, which you can't do very well in nonstick or anodized aluminum. Works great on my aux. induction burner for when I have four pots going on my stove. I don't miss the grill marks at all (if I do, I'll just brush the snow off my outdoor gas grill). Did a nice job of browning chicken parts and veggies for soup, and crisping up the skin for gribenes after (and when I overcooked it accidentally, the fond came right up with some broth and a plastic spatula--and the pan washed clean as a whistle with just a nylon scrubber and dishwashing liquid). I may yet get the 12" fry pan, which Cook's Illustrated says is sturdier; but I suspect I may opt instead for the even larger surface area of the 13" French skillet. All-Clad's stainless is so good that it is slowly weaning me away from nonstick for everything but fish filets and gooey stuff."
