You can use this Chef's Choice 120 Diamond Hone knife sharpener in metal for reconditioning dull knives or just for regular sharpening. Its great on European-style household and sporting knives. You can also use it on serrated knives thanks to the stropping and polishing disc in the third stage. The wheels in stages 1 and 2 on this Chef's Choice sharpener are super-hard industrial diamond so it's able to sharpen extremely hard steel blades.
