You can use it to sharpen almost any type of steel knife, including single-bevel Asian-style knives, cleavers, chef's knives, and serrated knives. With the Chef's Choice 2000 model you're able to sharpen even the hardest steel because it uses diamond wheels in the first stage. It also removes only the minimum amount of steel necessary for sharpening blades thanks to the fine honing discs in the second stage. This is an excellent alternative to sharpening services.
