Annually remove any metal dust that accumulates inside the sharpener by removing the small rectangular clean-out cover and brush off filings from the magnet with a paper towel, dry cloth or small brush.
No lubrication is needed for any moving parts.
There is no need for water on abrasives.
The exterior of the sharpener may be cleaned by carefully wiping with a damp cloth.
Do not use detergents or abrasives
Do no immerse in water or other liquids or item will be ruined and not covered by any warranty.

Chef's Choice Electric Knife Sharpener for Asian Knives

The Chef's Choice 316 electric knife sharpener is ideal for regular sharpening of modern Asian-style knives with 15 degree blade profiles, like santoku knives and sashimi slicers. Modern Asian cutlery uses some of the hardest steel available, so the Chef's Choice 316 uses super-hard diamond sharpening wheels in each of its two stages. This sharpener from Chef's Choice can be used on both single-bevel and double-bevel knives. It is not suitable for Asian knives with extremely thick blades like traditional Japanese deba knives.
