This Chef's Choice 320 FlexHone/Strop knife sharpener is perfect if you perform regular, light sharpening on your knives. It's ideal for maintaining European-style kitchen knives and sporting knives. This Chef's Choice sharpener can sharpen even the hardest steel because it uses actual diamond sharpening modules in the first stage. It can also sharpen serrated blades with its flexible stopping discs in the second stage. Chef's Choice does not recommend the 320 model for reconditioning heavily-dulled knives.
