This sharpener is named after the famous Shinkansen trains of Japan - sleek, fast, efficient and reliable. Each sharpening slot has two sharpening wheels pre-set at the factory Global angle for a perfect edge on your knife. The separate slots feature a coarse- and medium-grit wheel for a truly fine edge. Each wheel rotates over a small water reservoir to keep the blade clean and cool while sharpening.
This sharpener is great for most Global knives. Exceptions: Serrated knives and those with a traditional Japanese edge, which have a different edge angle.
