Slightly larger and more sturdy in construction than the 220 series Shinkansen sharpeners, the 440 series is intended for heavier use. Each sharpening slot has two sharpening wheels pre-set at the factory Global angle for a perfect edge on your knife. The separate slots feature a coarse- and medium-grit wheel for a truly fine edge. Each wheel rotates over a small water reservoir to keep the blade clean and cool while sharpening.
This sharpener is great for most Global knives. Exceptions: Serrated knives and those with a traditional Japanese edge, which have a different edge angle.
