This Kyocera Revolution series 6 inch nakiri vegetable cleaver in white is for quickly chopping vegetables. Japanese chefs use the nakiri knife with a short up-and-down chopping motion to quickly chop vegetables for sauteing. This Kyocera nakiri knife improves the traditional nakiri design by adding a razor-sharp ceramic blade that maintains its edge for longer. It also doesn't ever rust or corrode because ceramic is totally impervious to the solvents and moisture that often break down steel blades.
