"I have used the Classic Birds Beak for years but it left home so I decided to give the Ikon version a try. I always reach for this knife when working on fruits and vegetables; the curved blade lets you peel easier, remove the core of a quartered apple with less waste or reach behind that branch of broccoli. The problem with this version is the handle. The shape of the Ikon is great but a birds beak is always used with your fingers curled over the back of the handle and this just does not work well with the Ikon line. Wusthof would do better to have the spine of the blade on the same side as the "bottom" of the handle. Until they do, get the Classic version and save the $20."
