This knife is a 7 on a scale of 5. As a lifelong knife guy, and now the cook in my retired years, this is the knife I go to. Small and easy to control with good backbone for cutting nearly anything, even frozen meat. The big story is the steel! Don't know their formula, but it is the finest steel I know of. The edge can be made to shave and it does not dull easily. I use it multi times daily.
