It's capable of giving your knives a fine, polished edge or a sharp, steeled edge with bite. The first stage can sharpen the hardest steel blades because it uses a diamond wheel. The second stage uses a steel wheel to create an edge that's great for cutting fibrous foods. This sharpening station from Chef's Choice is even able to sharpen serrated knives because of its stropping disc in the third stage. This sharpener can help you to put a perfect 20 degree edge on any knife.
