The Chef'sChoice 316 electric knife sharpener is ideal for regular sharpening of modern Asian-style knives with 15 degree blade profiles, like santoku knives and sashimi slicers. Modern Asian cutlery uses some of the hardest steel available, so the Chef'sChoice 316 uses super-hard diamond sharpening wheels in each of its two stages. This sharpener from Chef'sChoice can be used on both single-bevel and double-bevel knives. It is not suitable for Asian knives with extremely thick blades like traditional Japanese deba knives.

This is a perfect sharpener for almost all modern Asian-style cutlery, like santoku knives!
