The Chef's Choice 320 FlexHone/Strop knife sharpener is ideal for regular, light sharpening on your European-style kitchen knives and sporting knives. It's capable of sharpening even the hardest knives because it uses diamond-hard abrasives in the first stage. The Chef's Choice 320 can also sharpen serrated blades thanks to the stropping and polishing discs in the second stage. Chef's Choice does not recommend this model for resharpening heavily-dulled knives.
