  • For best performance, you must season Emile Henry cookware prior to cooking in it.
  • It's easy! To season a new piece of ceramic cookware, add approximately 1 inch of milk to cover the bottom. Let the milk simmer for five minutes.
  • Remove the piece of ceramic cookware from heat and allow it to cool before cleaning.
  • Or, if religious requirements prohibit you from using milk in a pan that will be used for meats, simmer one quart of water with 1/2 cup of rice for five minutes. Cool and then clean the pan as you normally would.
  • Safe for use on any type of heat source, gas, electric, halogen, broilers, grills and microwaves. Emile Henry cookware can be used on induction cook tops, provided a Mauviel induction disc is used.
  • Also safe for freezing
  • It's important to slowly heat this ceramic cookware. Never heat an empty ceramic pot or pan.

After owning a Terra Cotta Tagine for over a year, it broke from fragility,and always had to soak it 6 hours in advance of use, I decided to purchase the Emile Henry Flametop Tagine. This is an AMAZING cooking vessel! Before the first use you simmer milk in it for 5 minutes,let it cool,clean and your good to go.This Tagine is exceptionally well manufactured in France and is safe for Rangetop, Oven and open Gas Flame. The Moroccan Chicken and Olives Tagine I prepared was done within 45 minutes. It was succulent to say the least. Its worth spending the money on, and you won't be disappointed! I bought mine from MetroKitchen and it arrived within several days. You cannot beat their price either. This Tagine is great for Healthy,Tasty cuisine.Its worth every penny!
