The Kikuichi Hammered Damascus Nickel Sweden 6.5 inch Utility Knife offers stunning, 45-layer Damascus stainless steel elegance with an incredibly sharp cutting edge. It can be used for paring, boning, slicing and chopping. It is one of the three essential knives in any Japanese knife set. This knife is finished with a beautiful rosewood, Japanese-style handle accented with an ebony-colored blade guard made of traditional water buffalo horn. The blade core is of extremely hard (HRC 60) Swedish high-carbon steel, known for its fine grain and lack of impurities, surrounded on both sides by 22 layers of three different types of steel: 11 layers of nickel steel, 6 layers of SUS410 and 5 layers of J1 stainless steel. These three types of steel were selected for their combination of beauty and functionality. The surface of the blade has a dimpled (Tsuchime) pattern to minimize food sticking to the knife during slicing or chopping. This Tsuchime pattern is created by hand-hammering the blade then heat tempering. Because each blade is hand-hammered each dimpled pattern is unique. The combination of individual hammering and 45 layers of Damascus steel is simply stunning! The handles are made in the traditional style with no rivets. The result is a gorgeous Damascus knife which holds the sharpest cutting edge with easy maintenance. This knife is great for boning or for slicing fish and vegetables. It can also be used for chopping vegetables.
