A Kikuichi Warikomi Tsuchime 8 inch Slicing Knife is useful for general slicing of fish and all types of poultry, meat and vegetables. It is also a good introductory length for first time "Western" buyers of high quality Japanese knives. This Kikuichi knife comes with a double grind, meaning both sides of the blade are sharpened, similar to most Western knife blades. This 8 inch slicing knife has a central core of extremely hard VG10 stainless steel (HRC60) surrounded by 16 layers of slightly softer, Damascus stainless steel to provide both flexibility and dramatic visual appeal. Each knife is hand forged, hand tempered, hand sharpened and hand finished. Each Damascus Tsuchime knife has a lifetime guarantee and free re-sharpening by Kikuichi.
