A Kikuichi Warikomi Tsuchime 9.5 inch Slicing Knife is a traditional slicing knife length, preferred by chefs experienced with Japanese slicing knives. It is ideal for slicing fish, but can be used for poultry, meat or vegetables. This Kikuichi knife comes with a double grind, meaning both sides of the blade are sharpened, like virtually all Western knife blades. This beautiful knife has a central core of extremely hard VG10 stainless steel (HRC60) surrounded by 16 layers of slightly softer, Damascus stainless steel to provide both flexibility and dramatic visual appeal.Each knife is hand forged, hand tempered, hand sharpened and hand finished.
