This Kyocera Kyotop HIP 8-1/4 inch sashimi knife is a long slicer that's made specifically for making sushi. The blade can easily fillet long pieces of fish because of its length and super-sharp, ceramic edge. Kyocera has improved the blade of this Kyotop sashimi knife by making it even harder than before with their new HIP process.
