You can use this beautiful Zwilling JA Henckels Miyabi Kaizen 5.5 inch hollow-ground santoku knife to chop fresh vegetables and cut meats similarly to how you use a chef's knife. This Kaizen santoku knife from Miyabi keeps its sharp, hand-honed edge for an incredibly long time because of the hard VG10 steel core.
