This Shun Classic 6 inch boning / fillet knife has a sharp, curved blade for making perfect fillets of chicken or fish. This extremely sharp boning/fillet knife from Shun has excellent edge life because the core is made from super-hard VG10 steel. For toughness against rust and other damage, the core is clad with 32 layers of stainless steel. It also features a beautiful Damascus blade finish as a result of its clad construction and a black pakkawood blade. Made in Japan, this quality Shun fillet knife comes with a lifetime warranty with normal use and proper care.
