  • MetroKitchen.com recommends washing your knives by hand and immediately drying them. Do not let your knives soak in water.
  • Avoid cleaners containing bleach or citrus extracts, as they may stain the surface of your knives.
  • For longer lasting knives, cut on a wooden cutting board. Cutting on hard surfaces such as stone, metal or glass quickly dulls blades.
  • To maintain a sharper cutting edge, use a sharpening steel, preferably each time after using your knives.
  • It's best to store your Shun knife so the edge and your fingers are protected, preferably in a block or in-drawer knife tray.
  • We suggest using a meat cleaver when you need to cut through bone, otherwise you can damage your knife blade.

I have had this knife for 4 years. I do take care of it. not allowed to be placed in the sink or dish washer! put back in the rack when done with work. I finally touched it up with a steel after two years use.

I have NEVER had a knife that was what I called sharp...By the time I finished slicing and chopping with my OTHER knives..I had worked up a sweat and felt like I had put in a full days work...I asked for a really good Chef's knife for Christmas and my son surprised me with this Santoku...It is the most AMAZING KNIFE I HAVE EVER SEEN..!! The first thing I sliced was an onion and it was like cutting butter...and was soooo smooth!! If you are looking for the BEST in knives...LOOK NO WHERE ELSE...THIS IS IT..!! INCREDIBLE DOESN'T EVEN SEEM TO BE THE BEST WORD TO DESCRIBE THIS KNIFE...NOW, I'M LOOKING TO BUY OTHERS IN THIS LINE!!
