The Shun Kanso 6.5 inch Nakiri has a super sharp edge. The Kanso blade looks quite different than other knife blades because of its metallurgy. The high-carbon, vanadium stainless steel in this blade provides a razor sharp edge. The crystalline structure of this special steel enables you to easily maintain this Kanso knife's sharp edge. The heritage finish of the Kanso knife blade beautifies with age and use. The tagayasan wood used for making the handle is extremely dense. It is the traditional wood used to make samurai swords. Full tang construction adds strength and improves balance. As with all Shun knives, the Kanso Nakiri knife is hand crafted in Japan with careful attention to detail.   • For longer lasting knives, cut on a wooden cutting board. Cutting on hard surfaces such as stone, metal or glass quickly dulls blades.
  • To maintain a sharper cutting edge, use a sharpening steel, preferably each time after using your knives.
  • It's best to store your Shun knife so the edge and your fingers are protected, preferably in a block or in-drawer knife tray.
  • We suggest using a meat cleaver when you need to cut through bone, otherwise you can damage your knife blade.
  • Many Shun knives don't need frequent sharpening because they are made from 32 extremely durable layers of stainless steel.
