The Shun Premier 3 inch vegetable knife is a great knife for peeling vegetables because of its straight blade and comfortable feel. The straight, sharp edge allows you to quickly peel the skin off of vegetables as well as easily chop small vegetables like carrots. This Shun Premier vegetable knife will keep its sharp edge for longer because of its VG-10 "super steel," core that's clad with 32 layers of stainless steel on the sides. It also has a great walnut-finished PakkaWood handle that feels comfortable and has a full tang for better balance.
