This is the best crepe pan that I have ever used! The pan is well made with a uniform heavy bottom and balanced. Keep the heat at medium setting, allow sufficient time to heat up since the base is thick. Use only silicon or wood utensil's and carefully wipe the coated cooking surface with a "light" coat of canola oil on a paper towel before each crepe. Hand wash only, when completely cool, with a liquid soap like Dawn to avoid harsh dishwasher detergents. This pan will last a lifetime with proper usage, care & storage to avoid stacking scratches. Read and follow the manufacturer directions about heat settings and using only the recommended high temperature oils.
