This cleaver is great! The 6" heavy (straight blade) is perfect weight to make quick work of any quartering of any kitchen-sized meat/fowl. The added weight of this blade is perfect and makes the smaller cleaver a great choice for all-around use. Don't be fooled. The 6" cleaver is substantial and large enough for just about any project. I am very happy with this purchase and glad to have another great Wusthof product. I mainly use for chicken (buy them whole and quarter) and for chopping brisket points/burnt ends. This blade is heavy enough to do much more with bone/cartilage and the added weight of the heavy blade makes chopping beef so much easier with less strikes. The blade has a blunter edge (as all cleavers do) to stand up to repeted strikes to bone and dense cartilage,however, to fit my needs I did sharpen to a lesser angle for added sharpness. In classic Wusthof fashion the blade holds its edge and is easily touched up with a couple of passes thru my electric stropping belt. GREAT PRODUCT! And fast shipping from Metro Kitchen.
