  • Your hands are protected from the blade by a divider between the blade and the handle, called a bolster.
  • The handle is especially sturdy thanks to its traditional 3 rivet design
  • The handle is made with a germ-resistant resin blend
  • Made in the knife capital of the world, Soligen, Germany

  • Blade plus handle measures 7 1/3 inches
  • Forged high-carbon stainless steel blade
  • Ice hardened for corrosion resistance
  • The Pro S line has a full tang, which means that the blade extends all the way to the end of the handle, giving the knife more durability.
  • Rockwell hardness is 57, the higher the number the harder the blade

  • recommends washing your knives by hand; then immediately drying them. Do not let your knives soak in water.
  • Avoid cleaners containing bleach or citrus extracts. They may stain the surface of your knives.
  • Always use a wooden cutting board to preserve blade sharpness. Cutting on hard surfaces such as stone, metal or glass quickly dulls blades.
  • To maintain a sharper cutting edge, use a sharpening steel, preferably each time after you've used a knife.
  • It's best to store your Henckels knife so its edge and your fingers are protected, preferably in a block or in-drawer knife tray.
  • We suggest using a meat cleaver when you need to cut through bone, otherwise you can damage your knife blade.
  • Lifetime warranty from Henckels

I have slowly been replacing some old non-branded knives with the Pro "S" knives. This one arrived two days later and has filled my need for a true pairing knife. Love the fact that the handle of the Pro "S" works for my hands well, and love the sharpness these blades arrive in. Still need a few more and my set is complete.
