The Shun Kanso 6 inch Utility Knife falls between a chef's knife and a paring knife in both size and use. This knife is ideal for for peeling, trimming, decorating, coring and other detail work, but it can also be used to chop small items like garlic and ginger. Utility knives are sometimes called sandwich knives because they work well on everything that goes on a sandwich, from thin-skinned vegetables like tomatoes, to meats and cheeses. Shun's Kanso series is designed based on a Zen philosophy meaning "Simplicity," but simplicity that is achieved by eliminating the non-essential.

  • Hand-sharpened 16° double-bevel blade (32° comprehensive).

  • Avoid cleaners containing bleach or citrus extracts, as they may stain the surface of your knives.
  • For longer lasting knives, cut on a wooden cutting board. Cutting on hard surfaces such as stone, metal or glass quickly dulls blades.
  • To maintain a sharper cutting edge, use a sharpening steel, preferably each time after using your knives.
  • It's best to store your Shun knife so the edge and your fingers are protected, preferably in a block or in-drawer knife tray.
  • We suggest using a meat cleaver when you need to cut through bone, otherwise you can damage your knife blade.
  • Many Shun knives don't need frequent sharpening because they are made from 32 extremely durable layers of stainless steel.
