Intended to be used as a carving knife for roast meats and birds, the Yaxell Dragon FIRE 10½ inch Slicer is so sharp that it can easily be used as a sushi/sashimi slicer. The thin blade allows you to slice breaded items like chicken cordon bleu without dislodging the crust. The handle is made of FDA approved red resin and linen Canvas Micarta with three stainless steel rivets. The canvas material is dyed red and brilliantly finished to last for decades. Yaxell Dragon knives are a perfect blend of Japanese craftsmanship and advanced American steel and technology.
