Unlike some, I have found the handle of this knife to be very good, and not likely to slip even when cleaning fish. The steel is excellent, but perhaps not quite the equal of the Bunmei Deba knife I also reviewed. (understand it is by the same parent company). Not the easiest steel to sharpen due to it's hardness, you need a very fine quality ceramic to really put a shaving edge on it.....but the problem there is not the knife, but the poor/soft ceramics sometimes out ot China these days. It is my 2nd fav. knife after the Bunmei.
