First of all it is a beatiful knife to look at. Tremendous balance. If you spin it on your counter top it just keeps on going, but of course, you want to know how it works. It is amazingly sharp. It does an excellent job paring. One key to its sharpness. I was slicing a large chilled brisket and struggling a with my slicer. I saw saw some fat that needed trimming, so I took out the parer. Then I tried to slice the brisket. It went through like it was slicing worm butter. Now thinking of getting the 9 inch slicer in this line.
